Remember the Starbucks drink called Chantico? I sure do...seemed like Liquid Bliss. However their version is full of sugar and full fat dairy...not the healthiest for our bodies.
Here's my version....
Ingredients: 12 ounces dark chocolate bar (I use Chocolove 70% cacao+) 2 1/2 cups unsweetened almond milk (hazelnut would be good too!) 1/2 cup thick cashew cream 1/2 teaspoon vanilla extract Add a drop or two of vanilla stevia if desired
Directions: In a double boiler over a saucepan of 2" hot water, melt chocolate over low to medium heat. When melted, pour in the milk and whisk constantly until smooth. Add cashew cream and vanilla. Add stevia, if desired. Remember: No need to bring to a boil, only to steaming hot. Serve around 170-180 degrees.
How do I make cashew cream? Soak 1/2 cup cashews in filtered water for a couple of hours or even overnight. Drain. Rinse. In a blender add 1/2 soaked cashews and 1/2 cup fresh filtered water until smooth. Straining not required. Use as desired.
